If it were a simple wish to have this state, you'd say "I wish you were ..." that is, "I wish you were [or 'could be'] the last person I saw at night and the first person I saw in the morning." All this can be said without 'would'.
Compare: "I wish you were my wife" and "I wish you would be my wife". The meaning is different.
