This is not an inversion. The sentence starts with a definition of "coca cola", then states what it has become.

If the question was about which item is incorrect, the third item "that" is incorrect, but so is the second item.
The sentence should be:
The second movement of Beethoven's seventh symphony, which seems to potray musically the tragedy of
the composer's deafness, is
what gives the symphony its darkly resonant tone.
The second item needs a definitie article, IMO. It is a specific composer.
The third item needs to be "what", which carries the sense of "the thing that". "That" by itself is insufficient.
