Hercules /'hз:kjuli:z/ OR /'hз:kjuli:ziz/ strength
Ramses/ræmsi:z/ OR /ræmsi:ziz/ reign
Xerxes /'xer/ OR /'xeriz/ conquest [do you say /'xer/ OR /xe'r/]

Tess’s /tesiz/mother
Loch Ness’s /nesiz/other monster

the princess’s /prinsesiz/pillow

Here's what I would use:
Sophocles’s, Socrates’s /'sɔfəkli:z/
Marcus Aurelius’s /'ma:kəs ɔ:'ri:liəsiz/ meditations
Jesus /ʤi:zəsiz/ teachings
Moses /məuziz/ OR /məuziziz/ children
Achilles /ə'kili:z/ heel
Hercules /'hз:kjuli:z/ strength
Ramses/ræmsi:z/ reign
XerxesOR /'xereksiz/ conquest
Tess’s /tesiz/mother
Loch Ness’s /nesiz/other monster
Black Bess’s /besiz/younger sister
the princess’s /prinsesiz/pillow
Jones’s /ʤəunziz/ house.
Others may well do them diffeently- it's an area where there are some differences.
