Default Teaching phonetics

What is the best book you feel for teaching phonetics?

When you teach phonetics to non-native speakers, would you teach it theoretically or practically? Would you teach students how to use the British/American accent?

Practicality is important IMO. I have found very few students to be interested in the ins and outs of phonetics; most are motivated by a desire to improve their accent/pronunciation rather than to know about the alveolar ridge.
