Could you tell me why is correct in English this form: "All the family go fishing"...???
I would say: All the family goes fishing...

Is it a property of the verb (to go foshing)???
or...is it a property of family???

The verb is connected to the family, but see the following link for information about collective nouns being singular or plural:

we can say family' is' or 'are '.
My family is here. I mean all of them are here.

My family are here. I mean most of them are here.
