Does "Adding it all up" mean, for example, there are numbers 1,3,7,11,32...and x, y,z, adding all the numbers so we have (1+3+7+11+32...+x+y+z) - this process of adding can be described as "Adding it all up"?

It can be used in that literal sense, but here it's a more like a figure of speech meaning "putting everything together'

Note that she's interested in both math and medicine, so there's a bit of word play going on.
