Can we use "accurate" to describe a person? Defenitions I've looked up in dictionaries refer to things, information etc.

"He is very accurate in his calculations" (Macmillan dictionary for advanced learners 2003)

I don't know if it is common or correct to say "an accurate auditor" for example.
I don't know if there are any similar or better words for it.
 
As Khosro said, you can be accurate in something. To say that a person is just accurate is uncommon.

I think that you can. I saw sentences like: "How can I be more accurate with shotgun/bow?".
Other members can help you to find better words for it, if there are any.

Furthermore, take a look at this sentence:
