1. In politics, if you bite the hand that feeds, benefactors can very quickly crush your political future.
2. Don’t bite the hand that feeds.

Are these correct? Or should it be “bite the hand that feeds you”?

As I already said, it's both. If you look again at that page, you'll find "you" in brackets. That means it isn't always used.

I'd prefer to include "you" in sentence 1 as I think that particular sentence would sound better with it. In sentence 2, which is closer to the basic idiom, both versions are heard.

I have only seen the brackets on this page, the rest of the sources include “you” as part of the idiom

If you google "Bite the hand that feeds", you're likely to find mostly examples of the phrase with "you" at the end.

Put "Bite the hand that feeds" in quotes and add a word that's possible if there was no "you". I used "Bite the hand that feeds and".
