1- By 2050, there will have been an additional two billion, most of them from poor countries.
2- By 2050, there will be an additional two billion, most of them from poor countries.

I have no problem with the first one but I would like to ask if the second one is OK or not.

It's the other way round for me. I have a problem with the first.

#2 is just fine.
 
This AmE speaker would also choose number 2.
 
Say:

By 2050 there will be two billion more people in the world, most of them from underdeveloped countries.
 
It depends entirely on what the original sentences refer to. If it refers to deaths from malnutrition, then 1. is correct. The same for births, funerals and marriages.
I agree with Tarheel that, if it refers to people, 'people' should be included, and 2 is correct.
 
Well, there certainly seemed to be a word left out.

I think the word "people" can be assumed.
 
And if they are still living in the poor/developing countries, in would work better than from for me.
