I've been watching a lot of series lately, and I'd like to know if we could use question tags in a sarcastic way, something kind of like this:
1 --> He is interesting, isn't he?
2 --> Oh, is... he?

Not only can you do so, but it is very common in speech. Here are some examples:

1. Really?
2. Seriously?
3. You think?

1 and 2 are often, but not always, sarcastic or ironic. Number 3 is invariably sarcastic.

Be aware that what works in speech doesn't always work so well in writing.

As @5jj has pointed out, my earlier post was unclear. What I meant, and should have said, was that 3 can be sarcastic when used as a question tag.

1. That's what she said, really?
2. That's what she said, seriously?
3. That's what she said, you think?

I've never come across anything like this before. Could it be a Canadian thing?

There is not what we traditionally call a question tag in #3. We see a question tag in: That's what she said, did/didn't she?

"I don't know, can we?"

It's all about the inflection.

I'd like to know if we could use question tags in a sarcastic way.

Well, you'd certainly think so, wouldn't you?

This was meant as a sarcastic example of confirming 'yes', but as SoothingDave mentioned, tone and inflection is going to carry the sarcasm much better than simple text.
