I don't understand why the words "Olympic athletic" start with a capital letter "O" in the following sentence:

We can't compare an Olympic athletic to Einstein.

Please quote the source of that text.

I saw somewhere write this way. It was a capital letter in the first word of "an Olympic athletic" when it wasn't the first word of the sentence.

Olympic is a proper noun.

Olympic is a proper noun.

No, it's an adjective. The noun should be athlete (not "athletic").

We tend to use a capital letter, because the word derives from the name of a place in ancient Greece -- Olympia.

You said "There was a capital letter in the first word of "an Olympic athlete" ...". The first word you quoted is "an". Are you saying that it was written "An"? I'm sure you're actually asking us why "Olympic" should be capitalised, but "Olympic" was the second word of the three you quoted.
