Usually, a casket will be adorned with flowers, or possibly pictures, or other decorative stuff. I guess she's trying to be emotionally evocative by talking about childhood dreams but it seems like bad writing to me. It's hard to say without reading the story.

I don't know why she's used the preposition in. It should be with.
 
I would take it to mean that the caskets (generally coffins in BrE) will be decorated with things that give clues to the dreams of the children that died. There might be photos or possessions that give an indication of what their hopes for the future were.
