No. We don't use "honestest". It's "most honest". If you're trying to make a superlative, always check the word in a good dictionary before using it. There is no absolute rule about which take the -est suffix and which need to be preceded by "most"; some just have to be learnt.

Rather than typing them out, I'll let you do the research. You can search for 'adjective comparative and superlative rules', and find them. Post back if you have problems locating those syllable-based rules.
Of course there are a few irregular adjectives which don't follow the rules, so you'll need to memorize them.
