My daughter has asked me if she should use 'art', 'arts' or 'the arts' in the following sentence, and I am a bit confused. What form would you use? (She means art/arts/the arts in general.)
1) I’ve had a lifelong passion for art since I was a child.
2) I’ve had a lifelong passion for arts since I was a child.
3) I’ve had a lifelong passion for the arts since I was a child.

Use the first one. It's the most natural.

"Art" often refers only to drawing and painting, but sometimes also includes sculpture. "The arts" is a much broader term including art as above, music, dance, and sometimes other types of performance. Barry Humphries, now known mainly for his Dame Edna character, started out doing performance art.
