Which of the above are correct if the idea is that each of the two of us has a different way of dealing with this kind of situation?
 
I don't understand why you complicated those sentences by adding "two". Let's remove it and examine those sentences.
1) The ways we two deal with this kind of situation are different.
OK.
2) The way we deal with this kind of situation are different.
That is ungrammatical because "way" does not agree with "are".
3) We deal with this kind of situation in different ways.
OK. That is the version you need.
4) We deal with this kind of situation in a different way.
That is grammatical, but it suggests "The (one) way we deal with this kind of situation is different from other ways". In other words, we employ one way, not two differing ways.
