What word can I fill in this blank?

If I change the question into "It was a really _____ Italian dish. The dish can only be found in Italy.", can I fill in "authentic"?

Many Italians have immigrated to the USA. And, of course, they took their recipes with them. It is unlikely that there are any Italian foods that can only be found in Italy.

It was a really authentic Italian dish works for me- some ethnic cuisine abroad is not the same as in the home country.
