John is 180 cm tall. Tom is 175 cm tall. Peter is 170 cm tall. Therefore John is taller than Tom __ Peter.
Which word should I fill in the above blank, "and" or "or"?

Both mean the same thing in the context.
 
We would use only "and" there.

I think the above sentence can be paraphrased as follows:
Diffusion takes place much more quickly with gases than with liquids AND diffusion takes place much more quickly with gases than with solids.

John is taller than both of them, therefore I would use "and" but that is because I have written a lot of computer code where you have to be precise about using "and" and "or" operators. Colloquially both are acceptable in that sentence.
 
I don't have a problem with or. (Not a computer programer)
