- Which phrases or verbs do you have for an action that you "use your left or right leg to move someone's legs to make them fall down"?

To trip someone seems like it might be the verb you're looking for.
However, when you trip someone, you don't necessarily use your leg to "move someone's leg."
You just place your leg in a way as to create an obstacle to walking on balance.
 
Specifically for your description, I can only think of "to kick someone's legs out from under them". As 5jj said, if you trip someone (or trip someone up - phrasal verb), you just stick your foot or leg out in front of them and they sort of walk into it and fall over.

"Trip" is probably right. In what context is this happening?
In Judo, 'O Soto Gari' is popular. In soccer, it's called an "illegal tackle". Where do you want to use it?
