mellow on a drink

Hello.

I know they say someone is drunk on something. But is also correct to say someone is "mellow on" a drink?

Does this work?

It was a nice afternoon and I was sitting in the balcony, mellow on wine.
 
No. You could try "mellowed by wine".
 
It would work in California — or, more likely: mellowing out on wine.

It's new to me, but make yourself happy.

I like Charlie's "mellowing out on wine". "Mellowed by" sounds a bit stiff.
