Which is the correct sentence?

The second is correct. Why did you italicise "sushi"?

The first would only be correct if you ate sushi and pasta together as a single dish.

And if that's the case, you would start with "My favourite dish" or "My favourite meal", not "My favourite food".

It's not originally an English word but it is an adopted word so almost everybody knows what it is (we don't translate it) so it can just be written normally. Note that "pasta" is an Italian word - on the basis of your reasons for italicising "sushi", you should have italicised "pasta" too. However, there was no need to italicise either.
