quite a few/many

"We saw quite a few cars on our way here"

Can I replace quite a few with with many? Is there even such thing as quite many? I haven't heard anyone using such a phrase (at least not that I can remember)

Yes you can. Cars is countable, so the opposite of a few cars is many cars.

Quite refers to intensity, while many refers to quantity. I believe you can say quite many, even though it may sound redundant, but I'm not quite sure about it, so let's wait for more replies from the teachers.

"Quite many" is not natural. There is no grammatical reason it's wrong (that I can think of).
There were quite a few...
There were many...
There were several...
