Hello

Can I use "gush" as a noun figuratively in this way? Does this work?

It felt like someone poured a gush of cold water on me.

No it doesn't. A gush isn't something you can pour; it's self-generated.
"The was a gush of water from the pipeline". The water gushed from the pipeline. No one gushed it.

Some writers can get away with repurposing words. I can imagine reading your sentence in Leslie Thomas's Dangerous Davies. He's a seasoned professional, though; amateurs should be less bold in their usage choices.
