Hi.

I am about to have dinner with my cousin. I also invited a friend to join us. She told me she would cancel her English class online and join us tonight. I wonder if it's natural to say "Thank you for postponing your class to join the dinner" to express my gratitude.

No. It would be natural to write 'Great! See you later'.

You can express your gratitude when you see her.

I appreciate your help, Rover.

When seeing her, is it natural to say "Thank you for putting off your class and eating with us tonight".

No. Perhaps:
Thanks for deciding to have dinner with us.

It's grammatical but it's very wordy and formal for talking to a friend. I might say something like "Thanks for ditching your class so you can come to dinner!"
