Hello.

Let's say you are looking at a bird or a plane in the sky. When that plane/bird is gone, is it correct to say this?

Is this good?

The plane/bird soared into the sky. I stared at it until it disappeared in the gray horizon.

I'd use either "into" or "over" before "the horizon".

I would say either until it disappeared over the horizon or until it disappeared from sight.

Or just "until it disappeared". Listeners would understand that you mean "disappeared from sight", rather than it just magically disappearing into thin air!
