Demonstrative pronouns: Possessive structure.

According to the Linguapress website

We can use
THAT/THOSE OF or .....'S (ONES (S))
in possessive structures.

Is it grammatically right to say / Sounds natural:

The first tourist's papers were in order, but those of the remaining tourists weren't.
Or
The first tourist's papers were in order, but the remaining tourists' ones weren't
?

Thank you a lot, people.
