Context: The HR department is informing the candidate who completed the interview that they will be interviewing a few more candidates. After the interviews are complete, they will inform the candidates of the results by email.

Please check the grammar.
If you are talking to the person then remove some of those words. Simply say, "We will be talking to a few more people. When the interviewing process is over and we have made a decision we will send you an email."

(If you're going to use the abbreviation just say HR.)

Context: The HR is informing the a candidate, after the completion of the interview, that this the hiring process is not [yet] over as we they want to interview a few shortlisted candidates. Can they say "Once it is done, we will send you an update via email"?
Please check the grammar.
The confusion stemmed from the fact that you used "HR" but then referred to it as "we", and used "a candidate" but then referred to them as "you". Can you see how my changes above make it much clearer that the sentence starting "Once it is done" is the one you were actually asking us to look at?
