We were sitting too close to each other that we were barely apart. There wasn't even an inch or gap between two of us let alone social distancing. We weren't even an inch apart.

Please check my sentences.

You might want to take some time to study the difference between "too" and "so". For example:

I am too short to reach the shelf.
I am so short that I can't reach the shelf.

We were sitting too close to each other to be mistaken for strangers.
We were sitting so close to each other that no one could have mistaken us for strangers.
 
We weren't even an inch apart.

Well, that's grammatical. I don't think I would see a reason to say it though. (People understand what "close" means.)

John: How close were you?
Jane: Quite close. In fact, were touching.
John: Would you say you were less than an inch apart?
Jane: Were you not paying attention to what I just said?
