what is the "baker's"?

in Harry Potter, there is a sentence "He'd forgotten all about the people in cloaks until he passed a group of them next to the baker's. " Then what is the "baker's"? Why it isn't "next to the baker"?
i'm in trouble. Please help me

I'm not good at writing English, so please understand if my sentences are awkward
And it's always thankful all the teaching although it isn't my question(ex. grammatical errors or awkward sentences) So please teach me (;_;)

It's universal in BrE. I don't know about other varieties.

Although "the baker's" would be understood, I would expect to hear "the bakery".

Although "the baker's" would be understood, I would expect to hear "the bakery".
I'd see bakery as a separate place from a baker's shop that did their own bread.
