I found an example in the Oxford dictionary:

https://www.oxfordlearnersdictionaries.com/definition/english/ribbon

The road was a ribbon of moonlight.

I know the meaning of "ribbon of road" but I'm not sure why moonlight is there. Does it mean moonlight glinted off the road? In that case, if there is sunlight, would it make sense to say "the road was a ribbon of sunlight"?

Yes, it's talking about light reflecting off the road.

Whether you replace moonlight with sunlight is not a matter of making sense but of poetic style.

This picture might help (look at the heading under it).
