I think I can split this sentence into two sentences, but am not sure.
Is it right to split this one sentence
"The grapes must be left on the vines until the first frost, after which they are harvested."
into
"The grapes must be left on the vines until the first frost." "After, grape they are harvested"?

And Is it okay to understand "this" as "which(process of leaving grapes on the vines untill it is freezed)"?

"After this" means after the first frost.
