You would take the car just when... Using would for criticism

Somewhere I read the following example "You would take the car just when I wanted to drive to my girlfriend." Can "would" be used to criticize a particular one-off example of someonen's behaviour, or should it only be be used to criticize general behaviour

As long as it's typical behaviour (not the specifics, just that general type of behaviour), then yes. It's more common in things like "Oh, you would say that, wouldn't you?! Typical!"
