Can I replace the phrase "representing 31.3 percent of the global market" by "being 31.3 percent of the global market"?
If possible, is there any difference in meaning between them?

I wouldn't- you could simply delete representing, but being doesn't sound very natural to me.

I think 'being' is probably what you're looking for, but it needs more: '...being a N% share...'.

Do you mean that "being" need to follow by a noun?
Isn't the phrase "31.3 percent of the global market" in "representing 31.3 percent of the global market" a noun?
