1)Absence makes the heart grow fonder?
why grow? why not grows?

2) what is the meaning by
"love sought is good, but given unsought is better",william shakespeare
is sought meant there is past tense of seek?

Grow is an infinitive there (though bare, without "to").

It means that you can cultivate a relationship with someone and eventually lead them to love you. But it's even better when they love you without your efforts.
