1-He is cold hearted.
2-He is cool headed.
3-His heart is cold.
Which one is better for someone who doesn't show emotion or doesn't express sympathy? Someone who is like a piece of stone?
Plz tell me other phrases or idioms about such people, if there is any other.

1 ans 2 are good phrases for the type of person you describe. 2 is used to describe someone who stays calm under pressure. There are a lot of similar idioms, similes and phrases, many of which are associated with parts of the body. I think this site has a lot of examples.
He has a heart of stone is more common than like a piece of stone.
