Well, it can be used and is used to mean, Take it easy, but that usage, to my knowledge, is rather rare at the moment. Take is slow generally means, go slow.

Pat: See you next week.
Max: OK. Take it easy. (Means, See you.)

Pat: I'm so upset!
Max: OK, take it slow. (Means, go slow, slow down, take a breath, relax and tell me about it.)
