In this case pitch has a different meaning. It means an spoken idea or delivery. As in you would pitch an idea to your boss at a meeting.
And adding a flourish just means to deliver the speech with an extra little something. The added may flourish my be anything that would perhaps make your pitch stand out a little from normal.

In this instance, a pitch is the synonym of a stall [such as a market stall], and by extension the selling ideas used in putting information to a company.

Adding a flourish means that you have added something that is rather exciting and eye-catching to draw in the customer. On a stall, it could be the use of a bright colour and banners.

Here proper understanding of the word “Pitch” is important. Your interpretation as “level not slope” is ok but level of what. It is level of performance which may be high, low or perfect and this has been derived from its original application to describe characterstics of sound.

The word “Pitch” originally denotes the frequency of sound which is variable. It can be high, low or perfect. A sound is said to be having perfect pitch when it responds to the human ear. In other words, it is good/pleasant to hear or acceptable to the year. This concept of perfect pitch is used in other spheres of human activities/performance, as in the setence in question. If you are a leader, you must have a leadership pitch which can keep your audience attentive or engaged to you, if you are an actor, your acting pitch must influence or move the audience, if you are a salesman, your sales pitch must attract the customer to the product marketed by you.

I am adding a little flourish to my pitch means you are imparting some new/novel idea or tricks to your performance as a leader/actor/teacher/salesman to achieve perfection or at least look different/unusual/ extraordinary.
