If you tell someone to hang on, you are telling them to hold tight so that they don't fall off.

"Hang in" means to persevere, don't give up, keep trying – often in the form "hang in there" or "hang on in there" (like the song title): "It's difficult to play golf well but if you hang in there long enough your skills will improve".
As Tdol says, "hang on" usually means to hold or grip onto something and so would be an appropriate thing to tell your motorcycle passenger.
More informally, both "hang on" and "hold on" can also mean "wait", usually for a short period: "We're going soon, just hang on/hold on while I find my car keys".
