Which is correct:

1) In order to sell our products we have to change minds of senior citizens.
2) In order to sell our products we have to change the minds of senior citizens.

'1' seems more logical to me, but it sounds incorrect! I'd use '2' although we're changing the minds of some senior citizens, not all.

1 is incorrect. 2 is correct. You are referring specifically to the minds of the senior citizens who go on to buy your products. You attempt to change the minds of all of them. You won't succeed but you'll manage to change the minds of some of them.
 
You need a comma after "products".
