Are the uses of 'wish' and 'hope' correct ?

We had a great trip in Turkey and we really enjoyed ourselves. I wish we could stay Turkey more days. I hope that we'll back there soon.

Yes, you used them correctly.

Since you mentioned Turkey in the first sentence, you could also say:

- I wish we could have stayed longer.
- I wish we could have stayed there longer.

I wish I'm making a sentence that I hope make any sense.
 
No. Say 'I hope my sentence makes sense.'
 
If I am on holiday now and today is the last day of my holiday. Can I say?
