"That's enough questions" is correct. It means "that [number of] questions is enough".

"Those are enough questions" is grammatically correct but not natural to my American ears.
 
Good question. It's peculiar, isn't it, sitifan?

Think of it this way:

- You: That's enough.

- Me: Enough what?

- You: Enough questions!​

I'd go further and say that that's completely wrong. The reference of That in the original is not equivalent to Those in sitifan's version.

The word That does not merely refer to the plurality of questions, although it really does seem to. The speaker is also talking about the whole situation, possibly including the length of time, in which the questioning is taking place. He wants to move on.

As a general rule of thumb, don't ever use These/Those are enough ...
