1. Why is it "it" (rather than "they")?

2. What does "some" here mean? I mean, in what context would we use this sentence?

Is it like this one below? (I say, "Hey! It’s some of the best beer going.")(But again, why not "they are some of the best..."?)

You could say that advertising is bragging. (If you don't have confidence in your product who will?)

"It" refers to the beer. Possibilities:

It's a good beer.
It's a great beer.
It will quench your thirst.

"It's some of the best beer going."

Apparently, they don't want to brag too much. So instead of saying "It's the best beer going" they say "It's some of the best beer going". (Now I'm really getting thirsty.;-))

Did I miss anything?

How about this?

Does "it" mean "this kind/brand of beer before you"? And does "some" mean "these beers/glasses of beer of that kind before you"?

I would say it more or less refers to beer in general.

The main thing is they're trying to get you to try their beer.

I think that here is another possible answer:

It's some of the best beer going.
----

"It" means "the beer (before you)".

“Some” is used since beer is uncountable (generally, and it is used unaccountably here, too), so you can't use one to refer to it. You use some instead.

It is like this:

Here is some water; this water is some of the best.

Here is some beer; this beer is some of the best.

I assume that "it" refers to the same kind/brand of beer; if there are two kinds/brands of beer (or above) before you, then say "they are some of the best beer going".

Is that right?
 
If you used "They are", you'd have to use "some of the best beers going".
 
Yes, "it" refers to the brand of beer.

I don't know how "they" enters the picture.
 
I can see why you wanted to use "They" given that the beers in the first picture are all from different brands. However, I take "It" to mean "Our selection of beers", which is a singular noun so attracts a singular pronoun.
