Are the words/sentence below good examples of how /ʌ/ can be spelled with an o or a u?

Mother → Mom → Mommy
?????? → Mum → Mummy

"I love my son; he's my sun."

The words mother and son both use the sound /ʌ/.

But Mom and Mum have different vowels, thus the different spelling.

Not necessarily. I say them both the same.

And therefore, slightly different pronunciation. Mom (mahm)/Mum (muhm), an AmE take.

And the pronunciation of "mom" depends on where you're from. I have two friends from the Midlands who pronounce it entirely phonetically. It rhymes with "Tom".

Which o's would they pronounce the same in "Tom's mom won't come."?

The ones in "Tom" and "mom" would be the same.
