I want to say a person is so fit. Can I say "Michelangelo carved them"? IS this correct and natural?

Nicole is so fit and her body is so perfect that you would think Michelangelo himself carved her out of marble.

You sometimes hear a fit and toned person described as having "a sculpted body" or "a body carved from stone". Those and minor variations are customary and natural expressions.
IS this correct and natural?

Your sentence is grammatical though it sounds a little overly wordy to me.

How about now?

Nicole's body is so perfect that you would think Michelangelo himself carved her out of marble.

It's shorter and preferable for that reason. But I wouldn't say something so fulsome. Others might feel differently.

If you plan to use something like this in real life, be very careful. Many people (both women and men) do not like having their body/figure commented on.

It's a tricky area. Attitudes vary considerably.
