How would an English speaker call the thing on the picture below? A rock passage? Or simply a passage?

Note that your original question should have been "What would an English speaker call ...?", not "How would ...?"

Stairs are steps which connect the different levels within a building. Steps outdoor, which are part of walkways or passages are just called steps and not stairs.
