Is it okay for me to use 'the' before certain hormone?(It was the first time that I mentioned 'certain hormone' in my writing.)

Is there only one such hormone? If not (and I know there are more), you're using the wrong article.

I want to introduce
Dehydroepiandrosterone sulfate (DHEA-S) in my writing... Not every hormones related to positive effects of stress.

Yes, but the part I've underlined says it better.
