It means Yes, it's very definitely "prominence day" for the sun.

For this context does if the situation would have been exactly opposite, would the answer have been as Definitely not or, reversing it, Not definetely?

Definitely not would reverse the sense. Not definitely would mean "maybe".

Is definitely not a set phrase or does it behaves like that when the sense is negative, which suggests we cannot substitute precisely not, exactly not, completely not, very much not?

I think you've been reading your dictionary again. Definitely not is definitely not a set phrase. The other phrases are simply unnatural.

What do you find if you google how to use a dictionary?

Sorry for wrong conjugation of behave in question form. No, I hadn't been reading a dictionary at that time. If others are unnatural can we say that definitely not is unique (only) natural one or can there be another natural way to say it instead of definitely not?

In American English, you could say absolutely not, certainly not, and probably quite a few other adverbs plus not.
