    Default I didn't hear Jane enter/entering

Jane entered the room but I didn't hear that.

    Both are possible.

Either one would be OK, but use of "enter" in that context could suggest an isolated event of limited/finite duration, whereas use of "entering" would suggest the "hearing" of the process was of a longer duration, perhaps from outside the room to some unspecified location in the room.
