Hello.

What is a verb I can use to describe the roots of the trees in this picture?

Does "stick out" work?

The bare roots of the tree were sticking out of the dirt.

Are there other choices? Does "lay bare" work if used passively?

"Laid bare" is what an investigator does when they make a conspiracy public. It doesn't work for roots that are sticking out of the ground. The roots in the picture are sticking out because the river bank has been eroded. The erosion has exposed​ them to the air.

Does this work?

The bare roots of the trees were sticking out of the eroding river bank.
 
We don't know if the river bank is continuing to erode so I'd use "eroded" there.
