1/ When she arrives there next week, I will write to her.

2/ When she arrives there next week, I will be writing to her.

Could you tell me which one is correct and please explain why!

Both are correct, with different meanings. The first means that after she arrives, you will write her. The second says that she will arrive while you are in the process of writing her.

does the second means after she arrives , I continue writing to her and write many many letter for her? is it right???
 
No. It means you will be in the process of writing her at the moment she arrives.
