Can I describe a person to be "self-protectively conscious"?
Is it an accepetable collocation?

Big words like collocation scare me. But I think you can. :)
 
I wouldn't say that, because conscious means awake, and I don't see how it is related to self-protectively. Did you mean self-consciously protective? or over-protective?

I would say no. I don't see what "conscious" adds to that sentence. The person is "self-protective".
 
It's also not possible to say whether any of your words are correct unless you give us a whole sentence and some context. They might all be inappropriate.

You might be attempting a phrase like 'weight-conscious' or 'money-conscious', in which case you could probably use 'security-conscious'. As it stands, it's odd.
 
You could say simply that they focus on defence in a fight.
